An interesting and nutritious carrot salad is an ideal dish for your little one to be served as a side-dish. Carrots are rich in vitamin A and good for your child's eyes.

    Ingredients to make Gajarachi Koshimbir:

    2 carrots, 1 tbsp sugar, 1 tbsp ghee, 1 tsp cumin seeds powder, 1 tsp mustard seeds, a pinch of hing, 1 tbsp lemon juice, 2 tbsp grated coconut, handful of coriander leaves, 1 green chilli chopped, 1 tomato chopped, salt to taste.

    Steps to make Gajarachi Koshimbir:

    1. Steam chopped carrots in a steamer or pressure cooker without whistle. Drain the carrots and kepp aside.

    2. Heat a tsp of ghee in a pan, add mustard seeds. As the seeds splutter add hing and green chillies.

    3. In a mixing bowl add sugar, lemon juice, coconut, salt and mix well.

    4. Pour this mixture along with tempering over carrots.

    5. Finally add cumin seed spowder, chopped tomato, and coriander leaves, and adjust the salt as per your taste. Mix well.

    Serve this yummy salad to your little one.
