Healthy Corn Veg Soup

Have you been trying soup recipes at home? Healthy Corn Veg Soup would be the right choice for your toddler. This recipe is very simple and does not require much effort or time. Corn is equivalent to eating a banana, but corn has less sugar and more protein and fiber.

Ingredients to make Healthy Corn Veg Soup:

½ cup corn kernels, 1 tbsp. boiled, peeled and chopped into small cubes of potato, 1 tbsp. boiled, green peas, 1 tbsp. boiled, peeled and chopped into small cubes of carrots, 1 tbsp. and chopped into small pieces of beans, 1 tbsp. finely chopped spring onions, 2 tsp. butter, 1 tsp. black pepper powder, water as required and salt to taste.

Steps to make Healthy Corn Veg Soup:

1. Pressure cook the corn kernels for 10 minutes in low flame.

2. Puree the boiled corn in a blender and reserve 1 tsp. of corn kernels without smashing it.

3. Heat butter in a heavy bottom pan and add the boiled veggies and cook them for approximately 1 to 2 minutes on a medium high heat.

4. Add in the corn puree, salt and approximately 1 cup of water. Allow the soup to boil for a few minutes.

5. You can adjust the consistency of soup according to your toddler’s preference by adding water.

Add a dollop of butter to the soup and serve to your toddler for today’s snack time.
