Instant Carrot Rice

When you have just cooked rice and wonder what curry and veggies to make, Instant Carrot Rice would be the right choice. This is simply delicious, healthy, and quick to prepare. Your child will just savour each mouth of it. Carrots are a good source of several vitamins and minerals, especially vitamin A, K, B6 and potassium.

Ingredients to make Instant Carrot Rice:

1 cup cooked rice, 1 cup grated carrot, 1 chopped medium size onion, 1 tsp. oil, ¼ tsp. turmeric, 1 silt green chilli, 4-5 curry leaves, and 1 tbsp. chopped coriander leaves

For seasoning:

1 tsp. mustard seeds, 1 tsp. urdu dal, 1 tsp. roasted and crushed ground nuts, 1 tsp. channa dal (Bengal gram), ½ tsp. 1 tsp. ghee, cumin seeds, salt to taste

Steps to make Instant Carrot Rice:

1. Heat a pan and pour oil and ghee, add mustard seeds, when it starts to splutter add channa dal, ground nuts, urdu dal, cumin and sauté till they turn golden.

2. Add curry leaves and onions and sauté till the onions are transparent; add green chillies, turmeric, grated carrots and sauté for few minutes or until the carrots are cooked and soft.

3. Add salt and the cooked rice to the pan and mix well and cook for 3-4 minutes, remove from the flame and garnish with coriander leaves.
