Instant Spongy Rava Idli

Spongy Rava Idli is a simple South Indian cuisine, yet healthy and delicious. It can be served for breakfast or dinner. Rava is loaded with vitamin B complex and is also high in vitamin E. This batter does not need any fermentation. This is simple and quick.

    Ingredients to make Instant Spongy Rava Idli:

    1 cup rava (sooji/semolina), ½ cup curd, salt as required, 1 tsp. chopped coriander leaves, 10 cashew nuts, 2 tbsp ghee, 2 tbsp. carrot grated, a pinch of baking soda, water as required to get a medium consistency batter, which is neither thick nor thin

    For the seasoning:

    1 tsp. oil, 1 tsp. mustard seeds, a pinch-asafoetida/hing, 1 tsp. urad dal, 1 tsp. Bengal gram (channa dal), ½ tsp. finely grated ginger, 7 chopped curry leaves, 1 tbsp. chopped coriander leaves

    Steps to make Instant Spongy Rava Idli:

    Roasting rava:

    1. Heat 2 tsp. ghee in a pan and add rava and roast in the ghee till they become aromatic and change colour.

    2. Remove the roasted rava in a mixing bowl and keep it aside

    For the seasoning:

    1. In the same pan, heat 1 tsp. ghee again and fry the cashews till light golden and transfer to the rava bowl.

    2. Now add 1 tsp. oil and when it heated add mustard seeds and when they splutter add channa dal, urad dal curry leaves, grated ginger and asafoetida and fry till the dals are golden. Add them to the rava bowl.

    Making the batter:

    1. Add grated carrot to the bowl of rava, curd, salt and water as required and make a batter which is neither thick nor thin.

    2. Keep it aside covered for 20-30 minutes.

    3. After 30 minutes, if the batter is thick, then add a few tablespoons of water to get medium consistency.

    4. Heat some water in an idli vessel on medium flame.

    5. Grease the idli moulds with oil and fill it with the rava idli batter. Steam cook for 10 to 12 minutes till it is cooked.

    6. Insert a curry leaf stem into the rava idli to check whether it is cooked. The stem should be clean without any batter.

    7. Do not over steam, as it will make the idli hard.

    8. Switch the flame and leave it to cool for 5 minutes. Take a spoon, dip it in some water, slide it under the idli, they will just pop out.

    The Rava Idlis are ready. Top them with some hot ghee and serve with idli podi or coconut chutney. Prepare them for today’s breakfast and delight your princess.
