Kaddu Dal Sabzi

    Ingredients to make Kaddu Dal Sabzi:

    1 small bottle gourd, 1 cup chana dal, 2 medium tomatoes chopped, 1 large onion chopped, paanch phoron powder (equal mix 1 tsp cumin seeds, 1 tsp fennel seeds, 1 tsp nigella seeds, 1 tsp mustard seeds, 1 tsp fenugreek seeds), 2 green chillies, 1 bay leaf, shredded coconut, ½ tsp pepper powder, 1 tsp coriander powder, 1 tsp turmeric powder, 1 string curry leaves, chopped coriander leaves, salt, 2-3 tbsp ghee, water

    Steps to make Kaddu Dal Sabzi:

    1. Wash and soak chana dal for approx half an hour. Wash, peel and cut bottle gourd.

    2. Heat ghee in pressure cooker; add bay leaf and curry leaves. Saute for 30 secs.

    3. Add chopped onion and saute till they become translucent. Add chopped green chillies.

    4. Now add tomatoes and all the dry spice powders. Saute till the tomatoes soften. Add shredded coconut and paanch phoron mix.

    5. The oil should start releasing from onion tomato mixture. Keep stirring.

    6. Now add soaked chana dal and lauki. Add water and stir.

    7. Cover with the lid and pressure cook it for 3-4 whistles.

    8. After opening the lid, if there is lots of liquid in the sabzi, then simmer without the lid to dry the liquids. Stir in between.

    Garnish it with chopped coriander leaves. Serve along with hot chapati.
