Kaddu Ka Bharta

Kaddu Ka Bharta is an aromatic preparation to delight your child with. Red pumpkin is packed with vitamin-A, flavoniod, and polyphenolic antioxidants.

    Ingredients to make Kaddu Ka Bharta:

    2 cups red pumpkin (bhopla / kaddu) peeled and chopped into cubes, 1 tsp. oil, ½ tsp. cumin seeds, ½ tsp. fennel seeds, ½ tsp. nigella seeds, ¼ tsp. fenugreek seeds, ¼ tsp. asafoetida, 1 medium-sized onion chopped, ¼ tsp. turmeric powder, ¼ tsp. chilli powder, 1 tsp. dried mango powder, salt as desired. 1 tbsp. freshly chopped coriander leaves

    Steps to make Kaddu Ka Bharta:

    1. Heat oil in a pressure cooker and add the cumin seeds, fennel seeds, nigella seeds and fenugreek seeds.

    2. When the seeds splutter add the asafoetida and onions and sauté for 2 minutes on a medium flame.

    3. Add the red pumpkin cubes, turmeric powder, chilli powder and salt with ½ cup of water and pressure cook for 2 whistles or until the pumpkin is over cooked.

    4. Open the lid after the steam is released and add dried mango powder and mix well and gently mash them and cook for 2 minutes on a medium flame. Garnish with coriander leaves.

    Prepare and serve your child this Kaddu Ka Bharta, which tastes fantastic with methi roti.
