Khara Upma with Vegetable Puree

Rava with a healthy blend of vegetables and amazing seasoning results in delicious upma preparation. Khara Upma with vegetable puree is made using the puree of different vegetables which give the required vitamin and minerals while rava provides carbohydrates. It can be given as a snack or in the breakfast.

    Ingredients to make Khara Upma with Vegetable Puree:

    1 cup mix of vegs like capsicum, onion, peas, tomato, carrot, 1 cup rava, ½ tsp each mustard seeds, urad dal, channa dal, cashew nuts, 2-3 sprigs of coriander and curry leaves finely chopped, ½ tsp red chilli powder, 1 tsp ghee, salt as required, 1 tsp oil

    Steps to make Khara Upma with Vegetable Puree:

    1. In a pan, boil all the vegetables for 5 mins. Once cool, blend to a fine puree.

    2. In a kadai, saute the rava for 2 mins. Keep aside to cool. In the same kadai, add oil. Add mustard seeds, channa dal and urad dal. Add curry leaves and cashewnuts. Once the mustard seeds crackle, add vegetable puree and red chilli powder. Cook the veg puree for 2 mins on medium flame.

    3. Add 2 cups of water to the puree mixture. Bring the water to a boil.Then add salt.

    4. Lower the flame and add the sauted rava. Keep stirring till the rava blends well and there are no lumps. Add the coriander leaves and top it with ghee. Give a thorough mix and switch off the flame.

    Khara Upma with vegetable puree is all ready. Enjoy!
