Ingredients to make Kheema Aash:
1 kg minced mutton meat (kheema), 2 cups rice, 6 tbsp ghee, 1 cup chana dal, 1 tsp turmeric powder, 2 onions chopped, 2 tbsp garlic paste, 1 tbsp ginger paste, 2 kgs beaten yogurt, salt to taste
Steps to make Kheema Aash:
1. Pressure cook the rice and lentils in water with turmeric and salt for approximately 4 whistles or cook in a vessel for 30 minutes. Mash this mixture well and keep aside.
2. Wash mincemeat and drain out all the water.
3. Heat ghee in a pan, add onions and fry till light golden brown. Add the mincemeat, along with ginger and garlic paste and a pinch of turmeric powder and salt to taste.
4. Fry all this together till the water evaporates and the mincemeat is dry. Remove from flame.
5. In another pan, pour the cooked rice and dal mixture. Add the meat mixture into this soft mash of rice and dal and mix well.
6. Add the beaten yogurt into this mince and rice mixture and keep stirring continuously till it begins to boil.
7. Keep cooking on a low flame for 20 minutes.
Serve hot.
