Cooked Rice – 1 cup, brinjal– 4 chopped, onion – 1 chopped, tamarind – small gooseberry sized, turmeric powder – ½ tsp, salt – to taste
To Roast and Grind: Coriander Seeds – 1 tsp, channa dal – ½ tbsp, urad dal – 1 tsp, cumin seeds – ½ tsp, curry leaves – 1 sprig, grated coconut – 1 tbsp
To Temper: Mustard Seeds – 1 tsp, Channa Dal – 1 tsp, Bay Leaf – 1, Oil – 2 tbsp
1. In a pan roast all the ingredients (except grated coconut) for ‘Roast and Grind’. Switch off flame, add coconut and give a quick stir. Cool and grind to a fine powder.
2. Heat oil. Add all the ingredients under ‘To Temper.’ Add onions and fry till transparent.
3. Add brinjal and saute well. Add tamarind, turmeric powder, salt and bring to boil till brinjal is cooked. Add the ground spices and mix well.
4. Cook for 5 minutes on low flame till the brinjal binds with the masala and looks like a thick gravy. Add this masala to the cooked rice and mash well with a spoon. Serve hot.
