Soya is an excellent source of protein for your growing baby. Along with rice, which has carbohydrates and veggies like potato, peas and carrot, which have vital vitamin and minerals, you can make yummy mashed soya pulao. Flavour the basmati rice further with ghee, garam masala and mint leaves. The pulao has all the nutrients and is ideal for your little one.
1 cup basmati rice, 1 potato, 1 carrot, ¼ cup peas, 1 tsp ghee, 1 tsp oil, salt as required, 2 tsp curd, ¼ tsp garam masala, 3-4 sprigs of mint leaves, 3 cups of water
1. Wash the rice well. Soak the rice for about 20 minutes. Drain the water and keep aside.
2. In a vessel, boil 1 cup water. Add the soya chunks and cook till they turn soft. Drain the water and keep the soya chunks aside.
3. In a kadai, add oil. Add the veggies and saute for 2 minutes. Add the soya chunks, garam masala, mint leaves and salt. Give a good mix.
4. Add curd and mix well. Cook on medium flame for 2-3 minutes till the veggie mixture gets dried.
5. Add the soaked rice, ghee and mix well.
6. Add 2 cups of water. Bring the rice mixture to a boil and cook on medium flame for 4-5 minutes till the rice gets cooked.
Garnish the mashed soya pulao with mint leaves. Feed your child this delicious and highly nutritious pulao!
