Nipattu is a spicy Karnataka deep fried snack, which is perfect for tea time. Also known as rice crackers are easy to make and can be prepared anytime for further use as well. It is loaded with protein and healthy carbs.

½ cup maida, 1/4th cup besan, 1 cup chopped coriander leaves, 2 cup rice flour, 1 tsp cumin seeds, salt as per taste, oil for frying.
1. Mix all the flour in a deep bowl, add 2 tbsp hot oil, salt and cumin seeds. Mix well.
2. Add little water at at ime and knead everything into a soft dough.
3. Take a big orange sized dough and roll it thick as for paratha.
4. With the help of cookie cutter make circular shaped nipattu.
5. carefully take them out deep fry in hot oil. Fry the nipattus on medium low flame till they turn golden brown and crisp.
Remove them, let them cool. Store in an air tight container for 10-15 days.
