Palak Mathri is a tasty healthy snack to be served with milk or tea. It has the goodness of spinach and onion makes it more crispy and tasty and is loaded with iron.

    Ingredients to make Palak Mathri:

    1 cup maida, ½ cup semolina, handful of spinach leaves finely chopped, 1 tsp ajwain, 1/4th cup chopped coriander leaves, 1 cup finely chopped onion, oil for frying, salt as needed.

    Steps to make Palak Mathri:

    1. Sieve maida and suji in a deep bowl. Add salt, followed by ajwain to it.

    2. Add warm 2 tbsp oil. Mix it. Now add spinach, coriander leaves, onion and rub gently with your palms.

    3. Add little water at a time and knead a dough. Keep aside for 5 minutes.

    4. Pinch a small ball sized dough; roll and flatten it to mathri. Make all mathris from the dough.

    5. Heat oil in a deep skillet and fry mathris on medium low flame. Fry till turns crisp and golden brown from both sides.

    Remove and cool them. Store them in air-tight container.
