Dahi or curd is counted as the world’s healthiest food because of its amazing health benefits. This recipe is simple and quick to prepare. Dahi contains a huge amount of calcium and vitamin D.

1 cup curd, ½ tsp turmeric, 3 tbsp besan, 2 tsp oil, ½ tsp mustard seeds, ¼ tsp fenugreek seeds, ½ tsp cumin seeds, 1 small bay leaf, 1 small red chilli (seeds removed), 4 curry leaves, salt to taste, required water
1. Mix curd, besan powder, salt and turmeric in a heavy bottomed vessel. Take care to mix smooth without lumps.
2. Keep on low flame and stirring at intervals and simmer and cook for 12 minutes till the besan flour gets cooked and the kadhi thickens a bit.
3. The consistency of dahi kadhi is neither thick not thin.
4. Keep it covered.
5. Heat oil in a tempering pan and add mustard seeds along with bay leaf.
6. Once the mustard crackles, add cumin, fenugreek, red chilli, asafoetida, and curry leaves till the red chilli darkens a bit.
7. Cover and let the tempering flavors infuse with the Rajasthani dahi kadhi.
This recipe makes an excellent summer dish. Serve with steamed rice or jeera rice for today’s lunch.
