Pudina Moong Dal Khichdi provides a wholesome and healthy diet to your child. The flavour of pudina (mint), will enhance the taste of the khichdi and your child will just love to grab the plate. Moong dal is low in fat and high in fiber and protein.
½ cup rice, ½ cup moong dal, 1 medium sized onion chopped vertically into thin slices, ¼ tsp. garam masala whole, ¼ tsp. turmeric powder, 8 pudina leaves, 1 tbsp. ghee, 1 tsp.oil, ½ tsp. cumin seeds, 1 small red chilli, ½ tsp. black pepper coarsely powdered, salt to taste and water as required.
1. Clean, wash and soak the rice and dal for half an hour.
2. Heat the ½ tbsp. ghee and oil in a pressure cooker, add garam masala whole, cumin seeds and when it crackles, add red chilli, onions, 6 pudina leaves and sauté for 1 minute.
3. Now add the rice and dal, turmeric powder, pepper powder and salt and sauté for few minutes and add water.
4. Add water and pressure cook this for 3-4 whistles, till everything is well-cooked.
5. When the pressure is released, mash the khichdi with a ladle.
Top it with ghee and garnish with 2 pudina leaves and serve it to your child today for lunch.
