Puffed Rice Delight

Puffed Rice delight is a versatile and easy to prepare food. It is easy to digest. By adding toor dal and vegetables, you can add protein and essential vitamins to your nutrition. In this recipe, we are using carrots, which is a good source of  beta-carotene and Vitamin K and onion, which is a good source of Vitamin C and dietary fibre.  A pinch of turmeric and jeera are also added, which will boost your immunity alongside turmeric adding colour to the dish. Finely chopped herbs like curry leaves and cilantro, both rich in Vitamins will add flavour too.

Ingredients to make Puffed Rice Delight: 

½ cup puffed rice, 2 tsp toor dal, 2 tsp onion(finely chopped), 2 tsp grated carrot, 2-3 curry leaves and cilantro(finely chopped), ½ tsp jeera, turmeric(a pinch) and salt( as per taste), ½ tsp mustard, 1 tsp oil

Steps to make Puffed Rice Delight:

1. Wash the puffed rice and soak it in water for 10 mins. Drain the water and keep aside.

2. In a pan, dry roast the toor dal and grind into fine powder. Remove and allow it to cool.

3. In the same pan, add oil. Once oil is heated, add mustard and jeera. As mustard crackles, add turmeric, finely chopped curry leaves, onion and saute till onion gets translucent. 

4. Add grated carrot and saute for 2 mins. 

5. Add the puffed rice, salt as per taste and toor dal powder. Mix well.

Garnish with coriander leaves. Delicious Puffed Rice Delight is ready.A quick and filling snack.
