We must try new tastes and flavours and here goes the delicious Quinoa Salad, rich in protein and carbohydrates from the quinoa, as well as vitamins and minerals from the veggies.

    Ingredients to make Quinoa Salad:

    1 cup quinoa, washed and drained, 1/2 cup boiled sweet corn kernels, 1/2 cup finely chopped coloured capsicum.

    To Be Mixed Into A Dressing: 2 1/2 tbsp olive oil, 1 tbsp lemon juice, 1 tbsp honey, 1 1/2 tsp dried oregano, salt to taste

    Steps to make Quinoa Salad:

    1. Boil 2 cups of water in a deep non-stick pan, add the quinoa.

    2. Mix well and cook on a medium flame for 10 to 12 minutes, while stirring occasionally. Keep aside to cool completely.

    3. Transfer the cooked quinoa into a deep bowl, add all the remaining ingredients along with the dressing and toss well.

    Serve immediately. We are certain you will relish this delicious treat called Quinoa Salad!
