Rajgira Halwa is an excellent dish made with Amaranth flour and cardamom to energize your little one. It is an ideal dish for you as well, especially on fasting days. The ghee present in the halwa gives the much needed energy. Amaranth flour is considered to be gluten free. If you are allergic to gluten or your child is, this is the right dish.

Rajgira ki atta: ½ cup, ghee: 4 tbsp, milk: 2 cups, sugar : 1/4 cup, cardamom (elaichi) : 1/4 tsp, almonds 1 tbsp
1. Start by heating the ghee in a deep kadhai.
2. Once the ghee is hot add rajgira flour in it and start stirring it.
3. Keep on stirring and mix until the rajgira flour is mixed nicely with ghee. In sometime it starts oozing out ghee & changes its colour.
4. Rajgira is roasted in ghee, now pour warm milk into it and stir it.
5. Mix the milk into rajgira. Add sugar at this time.
6. Heat the halwa on low/medium flame until the water evaporates. Stir the halwa continuously while cooking it.
Rajgira Halwa is done once it gets a good texture and starts releasing oil in the pan.
