Rice Badam Kheer

Kheer is Indian style rice pudding, which is everyone’s favorite. It is full of goodness of rice, milk and nuts. A sweet and creamy textured sweet dish, which will be loved by your little one. Having a rich divine taste, this kheer has high-energy quotient and is very nutritious for kids. Rice is rich in carbs, iron, vitamin B and protein. Milk is rich in calcium and almonds/raisins are rich in vitamin E and antioxidants.

    Ingredients to make Rice Badam Kheer:

    1½ cups grated khoya, 1 cup rice, 3 tbsp ghee, 10 cups whole milk, 2 cups sugar, 2 tsp saffron, 1 tsp cardamom powder, 1 tbsp sliced pistachios, 1 tbsp sliced almonds

    Steps to make Rice Badam Kheer:

    1. Rinse and drain the rice and keep aside.

    2. Heat the ghee in a heavy bottomed pan or kadhai and add the grated khoya to it. The khoya will start to melt and for a pasty liquid.

    3. Add the basmati rice to this and saute for a couple of minutes. Meanwhile, warm 2 tbsp of milk and add the saffron to it to bloom the saffron.

    4. Add the rest of the milk to the rice - khoya mixture and let it come to a slow boil. Reduce the heat to medium-low and let it simmer for about 30 minutes or so till the milk turns color to slight pink and the rice is cooked. Keep stirring every couple of minutes.

    5. Add the bloomed saffron and the cardamom to it and mix well.

    Serve hot or cold with sliced pistachios and almonds.
