Sabudana Vegetable Khichdi

Adding veggies into his recipe will make it more nutritious and brings a nice color to your dish.Sabudana is made from tapioca root that is loaded with calcium, iron, potassium, and vitamin K, which are the minerals responsible for healthy bone growth and development, crucial for babies.

    Ingredients to make Sabudana Vegetable Khichdi:

    1 cup sabudana, 1 boiled and chopped potato, ½ cup grated carrot, ¼ cup green beans, 1/4 cup green peas, 1/4 cup peanuts,1-2 green chiles, 1 tsp rai,1 tsp cumin seeds, ½ tsp red chili powder, ½ tsp black pepper powder, 1 tsp salt or rock salt, 2 tbsp Ghee

    Steps to make Sabudana Vegetable Khichdi:

    1. Soak sabudana overnight or for 4-5 hours.

    2. Drain it and keep aside in a bowl.

    3. Heat oil in a pan and add rai. Let it splutter and then add jeera in it. Add peanuts to the oil and roast them for a couple of minutes on medium flame.

    4. When the peanuts are roasted, add finely chopped green chillies , carrot, beans and boiled peas to the pan . Saute the veggies well for 3-4 mins. Then add chopped boiled potatoes.

    5. Add salt,black pepper powder, turmeric Powder & Red Chilli Powder to the pan and cook for a few seconds.

    6. Add the sabudana pearls to the mixture and gently mix with a fork. Make sure sabudana does not get mashed.

    7. Cover the pan with a lid and let the sabudana khichdi cook for 3-5 minutes. The sabudana will start to become translucent as they cook.

    Sabudana Vegetable Khichdi is ready. Garnish with chopped coriander leaves and serve it hot.
