A tasty and healthy snack, Savory Laddu, can be prepared using poha and assorted boiled veggies, which will give the required carbohydrates and vitamin minerals.

1 cup poha, 1 potato, 1 carrot, 2-3 French beans, ¼ onion, 2-3 sprigs of coriander leaves, oil for shallow fry
1. Wash the poha twice and drain off the water. Keep aside.
2. Pressure cook potato, carrot and French beans for 3-4 whistles.
3. Once the pressure cools down, mash the boiled veggies.
4. In a mixing bowl, add the poha, mashed veggies, finely chopped coriander leaves and onion. Add salt and mix to form a dough.
5. In an appam pan, grease the moulds with little oil. Once warm, make rounds of the poha veggie dough and place them gently on the moulds.
6. Cover the appam pan with a lid and cook on a medium flame for 2 -3 minutes.
7. Flip the laddu gently and cook similarly on the other side for 2-3 minutes. The laddu will turn crisp and light golden brown.
Delicious Savory Laddu is ready to be relished. Enjoy this yummy snack.
