The significant amount of dietary fiber in carrots plays an important role in maintaining good digestive health and its high amount of vitamin A helps to keep a healthy vision. Rice is a good source of protein and also easy to digest! This interesting variation can also be a great palette-changer.

Carrots, jaggery, rice puttu powder, coconut powder, water
1. Wash and grate the carrots, set aside.
2. Mix the rice puttu powder with grated carrots and jaggery using very little water.
3. In a puttu maker vessel, fill coconut powder and the carrot mixture alternately.
4. Heat water in a pressure cooker, place the puttu vessel over it and steam for 155 minutes.
Remove from the puttu vessel, cut into pieces and serve hot!
