Soft Ragi Idli:

Give a twist from routine ragi porridge to Soft Ragi Idli to your champ. Ragi is a good source of thiamin, zinc, copper, and manganese. These idlis will give your champ a feeling of fullness and keep his energy level adequate throughout the day.

    Ingredients to make Soft Ragi Idli:

    1½ cup idli rice (Idli pulungal arisi), 1½ cup ragi flour/finger millet flour, ¾ cup whole urad, ½ tsp. Fenugreek/vendhayam, salt and water as needed, ½ tsp. oil for greasing the idli moulds

    Steps to make Soft Ragi Idlis:

    1. Wash and soak rice, urad dal and Fenugreek/vendhayam separately, for 3-4 hours.

    2. First grind Fenugreek/vendhayam, with little water for 3-4 minutes until they are finely groud and have fluffed up.

    3. Add soaked and drained urad dal to the wet grinder. Add water little by little because it won’t fluff up well. Grind for 30 minutes and take the dal mixture into a bowl and set aside.

    4. Grind the idli rice until smooth. Now add in ragi flour and salt and mix it well and cover and let it ferment overnight.

    5. The next morning the batter would have risen, add a pinch of baking soda and fold it well. Ensure that the batter is not watery.

    6. Pour some water in an idli vessel and heat it on medium flame.

    7. Grease the idli moulds with oil and fill it with the batter. Steam cook for 8 to 10 minutes till it is cooked.

    8. Insert a curry leaf stem into the idli to check whether it is cooked. The stem should be clean without any batter.

    9. Do not over steam, as it will make the idli hard.

    10. Switch the flame and leave it to cool for 5 minutes. Take a spoon, dip it in some water, slide it under the idli, they will just pop out.

    Try this recipe today for breakfast and serve them hot with some ghee on top of it with tomato or coriander chutney to your champ.
