Spinach is a super food loaded with tons of nutrients in a low calorie package. Dark, leafy greens like spinach are important for skin, hair, and bone health. They also provide protein, iron, vitamins, and minerals. Yummy parathas for lunch are a nutritious blend of palak with urad dal. This one is a North Indian recipe, best served with tomato chutney. It is liked due to its great taste and tempting appearance.

Palak leaves-½ cup, wheat flour-1 cup, urad dal-1/4 cup, turmeric powder-1 tsb, cashews-few, salt-to taste, and oil-1/4 cup
1. Wash, chop, and grind palak leaves into puree with 2 tablespoon water.
2. Pressure cook urad dal till 1 whistle and keep aside.
3. Take a large bowl and add wheat flour, salt, turmeric powder and oil to it. Mix well and add palak puree and cashew paste.
4. Knead into soft dough with water and prepare small dough balls.
5. Stuff dough balls with cooked urad dal and rool out parathas using rolling pin.
6. Heat oil in a pan and cook paratha by flipping on medium flame.
Seve hot with chutney.
