Spinach Sambar is a healthy dish and a great accompaniment to rice. Green leafy vegetables are very good for health and must be included regularly in your little one's diet.

1 small bunch spinach (palak), 1 cup toovar (arhar) dal, 1 onion, 1 tbsp tamarind (imli) pulp, 1 tsp oil, asafoetida (hing) a pinch, 1 tsp mustard seeds (rai/sarson), 1 tbsp chana dal (split Bengal gram), ½ tsp fenugreek (methi) seeds, 1 red chili, 2 strips curry leaves (kadi patta), 10 tomatoes, 2 tsp sambaar powder, salt to taste, 1½ tbsp jaggery (gur)
1. Pressure cook chopped spinach and tur daal
2. Heat oil
3. Add mustard seeds and let crackle
4. Add chana daal,methi seeds and curry leaves
5. When the chana daal turns red, add chopped onions and saute till translucent
6. Add a cup of water,salt, gud,imly paste,sambaar powder and cut tomatoes
7. Boil till the tomatoes are thoroughly cooked
8. Add cooked spinach and cooked turdal
9. Let it simmer for a while
The sambar is now ready. You can serve along with rice.
