Sprouts Khichdi is light on stomach yet filling and nourishing. Moong dal and lal chana are good sources of protein making this khichdi a very healthy and wholesome choice for kids. Your little one would love it too.

2 tbsp moong dal, 1/4 cup rice, 2 tbsp sprouted moong, 2 tbsp sprouted lal chana, 1 tomato chopped, 1 tsp chopped ginger, 1 bay leaf, 1 tsp methi seeds, 1 tbsp dhaniya powder, 1 tsp kitchen king powder, ½ tsp roasted jeera powder, salt to taste, 1 tsp turmeric powder, 2 tbsp ghee, 1 dry red chili, ½ tsp chopped minced garlic, a string of curry leaves
1. Heat the ghee in a pressure cooker and add the methi seeds, bay leaf, curry leaves, red chilli.
2. When the seeds crackle, add the garlic paste and cook on a medium flame for a few seconds.
3. Add the ginger and tomato and cook for 2 to 3 minutes. Add salt, turmeric powder, dhaniya powder, kitchen king powder, jeera powder.
4. Add the rice, moong dal and sprouts and cook for 30 seconds.
5. Add enough water and mix well and pressure cook for 3 whistles.
6. Allow the steam to escape before opening the lid.
Top up with desi ghee and serve with fresh curd.
