Beetroot falls among the not so favourite list of vegetables for most kids. But with this Tasty Easy Beetroot Sambar, beetroot is sure to go into your little one's tummy!

3 medium sized beetroots, 2 tbsp tamarind (imli) pulp, 1 cup tomato puree, 3 tbsp sambhar masala, 1 cup boiled toovar (arhar) dal, 1/4 cup grated coconut, 2 tsp oil, 1 tsp mustard seeds (rai/sarson), 1 tsp urad dal (split black lentils), 4 curry leaves (kadi patta), 1/4 cup freshly grated coconut
1. Pressure cook the beetroot along with tamarind, tomato puree, sambhar masala and toor dal, till the beetroot turns soft.
2. Heat the oil in a kadhai, add the mustard seeds and urad dal.
3. When the seeds crackle, add the curry leaves and coconut and saute till it turns light brown.
4. Add this fried coconut to the beetroot, whisk and simmer for 5 minutes.
Serve hot.
