Looking for a nutritious bowl for your fussy kid? Clean your fridge and add all veggies of your choice in this dal to make it more healthier and tastier. It contains folic acid, proteins, carbs and fibre. Veggies will add more nutrients to this dish.

1 cup toor dal, 1 cup veggies of your choice (carrots, lady finger, kaddu, green beans),1 tbsp. tamarind juice, 1 tomato, 1 small onion, 1-2 green chiles, ¼ tsp turmeric powder, 1/4 tsp red chili powder, little jaggery, salt to taste,1 tsp mustard seeds,1 tsp cumin seeds, 1 tsp methi seeds, a pinch of asafetida, 1-2 dry red chiles, handful of curry leaves
1. Wash and soak dal for 1-2 hours and then pressure cook it. Keep it aside.
2. Heat oil in a pan and add mustard seeds, curry leaves, cumin powder, methi seeds, asafoetida and dry red chilies. Let them splutter
3.Then add the mixed vegetables and tomato
4. Add dry spices like salt, turmeric powder, red chili powder. Add a little water and simmer to cook.
5. When the vegetables are almost done, add dal, tamarind juice and jaggery. Let it boil for a minute.
Garnish with coriander leaves and serve it with rice/roti.
