You can prepare a sweet dish , called Valai Idiyappam, a kerala speciality using rice flour, jaggery and bananas, all which are good source of carbohydrates.

2 cups rice flour, 2 tsp ghee, 1 banana, 1 cup jaggery
1. Grease oil on an idli pan and keep it ready.
2. In a pan, saute the rice flour for 4 to 5 minutes.
3. In a blender, add chopped banana, crushed jaggery and rice flour. Add water as required. Please ensure the consistency of the batter should not be watery. It has to be more like idli batter.
4. In a kadai, add 1 tsp ghee. Once warm, pour the batter and keep stirring on medium flame till it starts to thicken and becomes a dough. Grease the dough with ½ tsp ghee. Make small balls of this dough.
5. Using the Idiyappam maker, put the small balls of the dough inside and press the idiyappam maker directly on the idli mould in a concentric round circle.
6. Cover the idli pan and steam cook the idiyappams for 5- 10 minutes.
Delicious sweet valai idiyappam is all ready to be relished. Enjoy!
