Sago is high in carbohydrate content. You can prepare delicious Vegan Sago Payasam with sago. Adding carrot, takes care of vitamin A nutrient and flavouring the payasam with jaggery, which also has carbohydrates and dry fruits which have vital vitamin and minerals, makes this payasam awesome in taste and wholesome in nutrition.

1 carrot, 3 tbsp sago, 2 big cups soy milk, 1.5 cup jaggery, 1 tbsp crushed dry fruits (1-2 cashew, 1-2 raisins, 1-2 almonds, 1-2 pista), ¼ tsp cardamom powder, 1 tsp oil
1. Soak the sago for an hour. Wash well and drain the water.
2. In a pan, add ½ tsp oil. Add the crushed dryfruits and saute for 2 minutes. Remove and keep aside.
3. In the same pan, add little water and melt the jaggery on medium flame. Filter the jaggery mixture and allow the syrup to cool.
4. In a vessel, take milk and sago. Cook on medium flame till the sago turns soft. Keep stirring in between and ensure milk does not stick in the bottom of the vessel.
5. Add the cooled jaggery syrup and give a good mix.
6. Add grated carrot and cook for 2 mins. Don’t overcook once you have added carrot. The consistency of the payasam will be little thick.
7. Garnish with crushed dryfruits and cardamom powder. Give a good mix.
Switch off the flame. Delicious Vegan Sago Payasam is ready. Serve warm or chilled. Devour and Enjoy!
