Fresh green vegetables are the number one source of healthy vitamins and minerals. They also boost immunity. Yellow Rice is one such recipe that aims at doing all of this.

Rice, carrot, potato cubes, salt, oil as required
1. Clean and wash rice. Cook the rice in a vessel with sufficient water.
2. In a pan heat oil and add grated carrot and potato cubes . Saute for 5-7 minutes.
3. Add the cooked rice to this mixture , mix well with salt and cook on low flame for 2 minutes.
Serve hot!
