Barley is a rich source of molybdenum, niacin, magnesium, phosphorus, chromium, Vitamin B1, copper, selenium, dietary fibre, manganese. Mushrooms are a rich source of selenium, copper, potassium, phosphorus, pantothenic acid, Vitamin B6, niacin, riboflavin, thiamine, Vitamin D, manganese, zinc, iron, folate, Vitamin C, protein and dietary fibre. This dish combines the goodness of both barley and mushrooms and is highly beneficial for your baby!
Ingredients: ½ cup pearl barley, 1 cup water or vegetable stock, 1 tsp. olive oil, 1 cup finely chopped, button mushrooms
Steps:
1. Boil water and cook the barley in it on medium flame for about 30 minutes. Later, remove from the flame, cover the pan and set aside for 10 minutes.
2. Heat oil in a non-stick pan and cook the mushrooms for about 5 minutes till they are soft and tender.
3. Pour the cooked barley and mushrooms into a bowl and mash them using a fork or spoon.
4. If your baby is not young enough to chew, then pour the mixture into a blender and process into a smooth puree.
