A quick and easy breakfast recipe can be made using Poha, which is rich in carbohydrates, proteins and iron. Seasoning Poha with whole seeds like mustard and cumin along with spices like turmeric and red chilli powder(all boosting immunity), makes it very tasty. You can also add veggies like tomato, onion, a sprinkle of lemon juice-- all good source of Vitamin C and garnish with coriander and curry leaves and cashews(rich in vitamins and minerals), which makes the Bombay Poha complete.
½ cup Poha, ¼ tsp mustard and cumin seeds, ¼ tomato, ¼ onion (both finely chopped), a pinch of turmeric and red chilli powder, 1-2 cashews, 2-3 sprigs of coriander and curry leaves(finely chopped), ¼ tsp lemon juice, ½ tsp oil, salt to taste.
1. Wash the poha well. Drain the water and keep aside.
2. In a pan, saute the cashews till light brown and keep aside. You can crush them to fine powder.
3. In the same pan, add oil, mustard and cumin seeds. Once the mustard seeds crackle, add curry leaves, onion. Saute till the onion turns translucent.
4. Add the tomato, turmeric and red chilli powder. Once the tomato becomes soft, add the washed poha and salt as required.
5. Mix well. Cook for 2 minutes.
6. Finally, add the lemon juice, cashews and coriander leaves. Give a thorough mix.
Delicious Bombay Poha is ready. Serve and enjoy it!
