Carrot khichdi is one of the healthiest and nutritious options. It is a complete meal in itself and provides plenty of energy, protein and folic acid.
It is a filling meal. Combination of dal, rice, and carrot is a good source of dietary fiber, Vitamin C, magnesium, potassium and phosphorous. Carrots are excellent sources of beta-carotene, which turns into vitamin A in the body. Vitamin A aids for the eyes.
1/3 cup toor or moong dal, 2/3 cup rice, 1 carrot, 1 onion, 1 tomato, 3 cups water, ½ teaspoon cumin seeds or cumin powder, a pinch of turmeric powder, 2 garlic cloves(optional), 1 teaspoon ghee, a pinch of asafetida.
1. Wash and soak dal and rice together for 30-45 minutes.
2. Wash and cut the tomato and onion into small pieces. Grate the carrot and keep aside.
3. Put ghee in a pressure cooker and fry cumin seeds till they crackle. Add the chopped onions and fry them till they become transparent. Add the tomatoes. Fry a little. Now, add grated carrot to it and fry till it turns slightly soft.
4. Add turmeric powder and asafetida. Now, add the washed rice and dal, fry for a minute and add 3 cups of water. Pressure cook for 3 whistles (1 on high and 2 on medium).
5. Allow the steam to escape before opening the lid. Mash the khichdi a little with the back of a spoon.
Serve lukewarm with fresh curd.
