Jaggery Kheer is made using Jaggery, a natural sweetener that provides good amount of minerals. By adding milk, which is a rich source of calcium, and rice, a rich source of carbohydrates, this dessert becomes even more nutritious. Topping it with powdered cashews, which is rich in vitamins and minerals and flavouring the kheer with saffron and cardamom, gives you an ultimate dessert.
Ingredients to make Jaggery Kheer:
½ cup Basmati rice, ¾ cup Jaggery finely crumbled jaggery, 1-liter milk, 3-4 powdered, cashews, ¼ tsp cardamom powder, 3-4 stands of saffron dissolved in 1 tsp milk.
Steps to make Jaggery Kheer:
1. Wash and soak the basmati rice in water for 2 hours. After this strain the rice and drain the excess water.
2. Keep milk for boiling. Once it starts boiling, add the rice and stir well. After one simmer, reduce the flame. Keep stirring so that it does not stick to the bottom of the vessel.
3. In another pan, add half cup water and put the crumbled jaggery. Mix well. Once the jaggery dissolves in water, turn off the flame. Strain the jaggery syrup and allow it to cool.
4. Once rice is well cooked, add the strained jaggery syrup, cardamom powder, few saffron strands and cashew powder.
