Nutritious Spongy Brown Idlis

This is a super food for your super kid. Nutritious spongy brown idli is made of brown rice which is loaded with manganese, selenium, copper, niacin and dietary fiber. To get soft idlis- the magic is the poha/ aval/ avalaki. A handful of soaked poha ground and mixed in the batter gives you soft idlis.

    Ingredients to make Nutritious Spongy Brown Idlis:

    1 cup brown rice, 1 cup parboiled idli rice, ½ cup whole urad dal, ½ tsp. Fenugreek seeds/vendhayam, 1 cup brown poha/ aval, water and salt as needed

    Steps to make Nutritious Spongy Brown Idli

    1. Wash and soak both the rice, urad dal and Fenugreek/vendhayam separately, for 3-4 hours.

    2. First grind Fenugreek/vendhayam, with little water for 3-4 minutes until they are finely ground and have fluffed up.

    3. Add soaked and drained urad dal to the wet grinder. Add water little by little because it won’t fluff up well. Grind for 30 minutes and take the dal mixture into a bowl and set aside.

    4. Grind poha to a smooth paste and add the brown rice and the idli rice and grind until smooth. Now add in salt and mix it well and cover and let it ferment overnight.

    5. The next morning the batter would have risen, add a pinch of baking soda and fold it well. Ensure that the batter is not watery.

    6. Pour some water in an idli vessel and heat it on medium flame.

    7. Grease the idli moulds with oil and fill it with the batter. Steam cook for 8 to 10 minutes till it is cooked.

    8. Insert a curry leaf stem into the idli to check whether it is cooked. The stem should be clean without any batter.

    9. Do not over steam, as it will make the idli hard. 10. Switch the flame and leave it to cool for 5 minutes. Take a spoon, dip it in some water, slide it under the idli, they will just pop out.

    Experiment for today’s breakfast and serve it to your kid with onion sambar.
